After placing your order, we’ll contact you to discuss final payment, delivery timing, and your preferred cut selections.
Final pricing is calculated based on the animal’s hanging weight after processing.

Quarter of Cow - Forequarter
A typical quarter weighs approx 60-75kg on hooks which includes the weight of the bones. We'll send you a cut up list with the selection of cuts provided, once you have placed your order.
A deposit of $250 is required to sercure your order. This can be paid by direct deposit using your name and beef as the reference.
An animal will then be processed at the first opportunity; beef is aged for a minimum 2 weeks. At this point in time, we'll advise you of the final weight and your balance owing, of which you'll need to pay prior to delivery or collection.
Once we've got your order we'll send you a cut list for you to fill out. We send this to our butcher so he can cut it to your specifications. Our cut list for a forequarter includes:
- Scotch fillet (steaks. whole)
- Bolar blade (roast, steak, diced)
- Oyster blade (steaks, Texas t-bone)
- Chuck (steaks, diced. minced)
- Osso Bucco (whole, minced)
- Brisket (sausages, rolled, minced)
- Sausages, mince, diced and strips addins

You can request additional sausages, mince, diced or strips with your order and we can also accommodate specific cut requests not listed here. As this takes our butcher longer to prepare, these customisations cost extra. We can let you know the additional cost of processing for these once we know what you'd like to order.
